Easy Ground Beef Tacos with a Secret Ingredient (Kid Approved!)

Taco night is always a hit in our house, but this time I decided to sneak a little extra nutrition into our usual ground beef tacos. And when I say nobody noticed, I mean nobody noticed.

The secret? A can of lentils.

I know, I know. Lentils in tacos might sound a little strange, but hear me out.

I’ve been trying to incorporate more fiber into our meals, especially for my youngest. I figured mixing some lentils into our taco meat would be an easy way to do it without completely changing a dinner I already know my family loves.

Well, my youngest ate two tacos and then asked for THREE more. 😂

I’d say that experiment was a success.

The lentils blend right into the seasoned ground beef, adding fiber, stretching the meat a little further, and making dinner more filling. And with charred corn tortillas, fresh toppings, and my creamy blended salsa, these tacos were seriously delicious.

What You’ll Need

For the Ground Beef & Lentil Filling

  • 1 lb ground beef
  • 1 can Great Value organic lentils, drained and rinsed
  • 1–2 teaspoons avocado oil, if needed
  • 1 tablespoon chili powder
  • 1 teaspoon beef bouillon powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground coriander
  • Salt to taste

For the Tacos

  • Corn tortillas
  • Shredded white cheese (I use chihuahua style melting cheese)
  • Finely diced red onion
  • Fresh cilantro
  • Lime wedges

For the Creamy Blended Salsa

  • Your favorite salsa
  • 1–2 tablespoons avocado oil

Let’s Make Some Tacos!

1. Brown the Beef

Heat a large skillet over medium-high heat. Add a little avocado oil if needed, followed by your ground beef.

Break the beef into small pieces as it browns. I like a finer texture for tacos because it makes the filling easier to distribute and helps everything soak up the seasoning.

2. Add the Secret Ingredient

Once the beef is browned, add your drained and rinsed lentils.

Season everything with chili powder, cumin, garlic powder, onion powder, coriander, beef bouillon, and salt to taste.

Give everything a good stir and let it cook together for a few minutes.

Here’s the fun part: the lentils start blending right into the ground beef. Between the seasoning and the texture, they’re surprisingly difficult to distinguish from the meat.

No separate pot, no extra cooking, and no complicated steps. Just open a can, rinse, and toss them in.

3. Get Those Tortillas Toasted

Personally, I love a corn tortilla with a little char on it.

Warm your tortillas in a hot, dry skillet or carefully over an open flame until they’re soft, pliable, and have a few toasted spots.

It adds so much flavor and makes a huge difference compared to using them straight out of the package.

4. Make the Creamy Salsa

This is one of my favorite little kitchen tricks!

I blend my salsa with a drizzle of avocado oil until it emulsifies into a smooth, creamy sauce. No sour cream or mayonnaise needed!

It adds so much flavor to these tacos, and that creamy texture is perfect for drizzling over the top.

And because this salsa deserves a little spotlight of its own, I shared the full homemade recipe! Trust me, it’s worth making from scratch.

5. Build Your Tacos!

Fill your warm tortillas with the seasoned beef and lentil mixture.

Top with shredded cheese, diced red onion, fresh cilantro, and a generous drizzle of that creamy salsa.

Finish with a squeeze of fresh lime.

I served ours with Mexican rice and refried beans topped with melted cheese, because in this house, we love a good, full plate of food.

Why I Love Adding Lentils to Ground Beef

Besides the fact that my kids had absolutely no idea they were eating them, there are a few reasons I’ll definitely be doing this again.

More fiber without changing dinner. Lentils are naturally high in fiber, which is something I’ve been making an effort to incorporate into our family meals.

It stretches the ground beef. Adding one can of lentils to a pound of beef gives you more filling without needing to buy another pound of meat. With grocery prices being what they are, I’ll take that win.

They’re ridiculously easy to use. Since canned lentils are already cooked, there’s no soaking or simmering involved.

They blend right in. Once everything is seasoned together, the lentils take on the flavor of the taco meat. Even my youngest, who I was specifically trying to get more fiber into, didn’t notice them.

And considering he asked for five tacos total, I’m pretty confident this recipe is staying in our rotation.

A Few Tips From My Kitchen

  • Don’t skip draining and rinsing the lentils. You don’t want all that extra liquid in your taco filling.
  • Let the meat and lentils cook together for a few minutes so the flavors have time to come together.
  • Toast your tortillas! It’s a small step that makes such a difference.
  • Use whatever toppings your family enjoys. That’s the beauty of taco night.

A Little Note From My Kitchen

If you’ve read any of my other recipes, you already know that I cook with my heart, not measuring cups.

Most of my cooking involves a little of this, a little of that, and tasting as I go. The measurements I’ve shared are approximations to help you recreate these dishes in your own kitchen.

Don’t be afraid to adjust the seasonings, add a little extra garlic, or make something your own. That’s half the fun of cooking.

And if you’re trying to sneak a little more fiber into your family’s meals, give the lentils a chance. You might just end up with a kid asking for three more tacos, too. 😂
