How to Make Mediterranean Grilled Chicken Bowls
1. Marinate the Chicken
In a large bowl, combine the plain Greek yogurt, lemon juice, cumin, paprika, ground coriander, Cavender’s Greek seasoning, and a pinch of cinnamon.
Add the chicken breasts and coat them thoroughly in the marinade.
Cover and refrigerate for at least 30 minutes, although a few hours will give the flavors more time to develop.
I love using Greek yogurt in chicken marinades because it helps keep the meat juicy while allowing all those spices to cling to the chicken.
And don’t skip the cinnamon! Just a tiny pinch adds a subtle warmth without making the chicken taste sweet.
2. Grill the Chicken
Preheat your grill to medium-high heat.
Remove the chicken from the marinade, allowing any excess to drip off.
Grill until nicely browned with a little char around the edges, turning as needed.
I pull my chicken around 160°F and let it rest, allowing the temperature to continue rising.
For food safety, make sure the thickest part reaches 165°F before serving. If it doesn’t reach that temperature while resting, return it to the grill.
Let the chicken rest for about 5 minutes before slicing.
3. Make the Garlic Jasmine Rice
Rinse the jasmine rice until the water runs mostly clear.
Add the rice, water, chicken bouillon, minced garlic, lemon juice, onion powder, garlic powder, and black pepper to a saucepan.
Bring to a boil, reduce the heat to low, cover, and simmer according to your rice package directions, usually around 15 minutes.
Remove from the heat and let the rice sit covered for another 5 minutes before fluffing with a fork.
Taste before adding additional salt since the chicken bouillon already contains sodium.
The lemon gives the rice a subtle tang that works beautifully with the grilled chicken.
4. Roast the Crispy Chickpeas
Preheat your oven to 425°F.
Drain and rinse the chickpeas, then pat them as dry as possible with paper towels or a clean kitchen towel.
This is important! The drier the chickpeas, the crispier they’ll get.
Toss them with olive oil, curry powder, cayenne, salt, and black pepper.
Spread them in a single layer on a baking sheet.
Roast for approximately 25–35 minutes, shaking the pan occasionally, until golden and crispy.
The curry powder adds warmth, while the cayenne brings a little heat.
They’re honestly good enough to snack on by themselves.
5. Prepare the Fresh Chopped Salad
In a bowl, combine the diced cucumber, tomatoes, red bell pepper, and red onion.
Drizzle with red wine vinegar and season with salt and freshly cracked black pepper.
Toss everything together and refrigerate until ready to serve.
I love how simple this salad is. It doesn’t need a complicated dressing because the fresh vegetables and vinegar provide plenty of flavor.
6. Blend the Spicy Cilantro Yogurt Sauce
This sauce deserves its own moment.
Add the Greek yogurt, fresh cilantro, Thai bird’s eye chilies, garlic, lemon juice, and a pinch of salt to a blender or food processor.
Blend until smooth and creamy.
Add a little water at a time until the sauce reaches your preferred consistency.
I like mine thin enough to drizzle over the entire bowl but still thick enough to cling to the chicken.
A little warning: Thai bird’s eye chilies are no joke!
Two chilies give this sauce a serious kick. If you prefer something milder, start with half a chili and work your way up.
The Greek yogurt balances the heat beautifully, while the cilantro and lemon keep everything tasting fresh.
And unlike my other spicy garlic yogurt sauce, this version doesn’t use Sambal Oelek. All the heat comes from fresh chilies.
7. Assemble Your Mediterranean Bowls
Now for the fun part!
Start with a generous scoop of the garlic jasmine rice.
Add the sliced grilled chicken, a helping of the fresh cucumber and tomato salad, and a handful of crispy curry-spiced chickpeas.
Sprinkle crumbled feta cheese over everything.
Finally, drizzle generously with the spicy cilantro Greek yogurt sauce.
I like getting a little bit of everything in each bite. The creamy sauce, warm rice, crunchy chickpeas, and fresh vegetables work so well together.
Tips for Making the Best Mediterranean Chicken Bowls
Give the chicken time to marinate. Even 30 minutes helps, but a few hours allows the flavors to develop.
Dry the chickpeas thoroughly. Moisture is the enemy of crispy roasted chickpeas.
Don’t skip the fresh lemon. It brightens the chicken, rice, and sauce.
Adjust the heat to your preference. Thai chilies are significantly hotter than jalapeños, so start small if you’re sensitive to spice.
Keep the salad separate until serving. This helps the vegetables stay fresh and crunchy.
Make extra sauce. Seriously. It’s delicious on grilled meats, roasted vegetables, wraps, and even as a dip.
Are These Chicken Bowls Good for Meal Prep?
Absolutely!
These bowls are great for preparing lunches ahead of time.
Store the cooked chicken and rice in airtight containers in the refrigerator for up to 3–4 days.
Keep the chopped salad and yogurt sauce in separate containers so everything stays fresh.
For the best texture, store the crispy chickpeas separately and add them just before serving. They’ll soften in the refrigerator, but you can crisp them up again in the oven or air fryer.
When you’re ready to eat, reheat the chicken and rice to 165°F, then add the cold toppings.
A Fresh, Flavorful Dinner Worth Repeating
I think one of my favorite things about cooking is taking simple ingredients and turning them into something that feels special.
There’s nothing particularly complicated about this meal. It’s chicken, rice, vegetables, chickpeas, and yogurt.
But when you add fresh garlic, lemon, warm spices, a little heat, and plenty of flavor, it becomes so much more than that.
These Mediterranean grilled chicken bowls are hearty, fresh, creamy, crunchy, and just spicy enough to keep things interesting.
And they’re definitely going into our regular dinner rotation.
I cook with my heart, not measuring cups.
The measurements in my recipes are approximations because most of my cooking happens by taste, instinct, and a little bit of love. Feel free to adjust the seasonings and ingredients to make this recipe your own.
