Lemon Herb Roasted Chicken with Garlic Potatoes, Peppers & Air Fryer Asparagus
A flavorful, comforting chicken dinner with crispy golden skin, garlicky potatoes, sweet bell peppers, and perfectly seasoned asparagus.
Some of my favorite dinners are the ones that look a little fancy but really don’t require anything complicated. This lemon herb roasted chicken is one of those meals.
The chicken gets a simple, flavorful marinade made with fresh lemon, Dijon mustard, and pantry seasonings. I sear it in a hot stainless steel pan to get that beautiful golden skin before finishing it in the oven.
On the side, I make skillet garlic potatoes with red bell peppers and air fryer asparagus. Everything comes together into a satisfying, homemade dinner that feels special enough for a Sunday evening but is simple enough for a regular weeknight.
The best part? You don’t need a long list of expensive ingredients.
Why You’ll Love This Recipe
- Big flavor from simple ingredients. Lemon, garlic, Dijon mustard, and a few pantry staples do most of the work.
- Crispy, golden chicken skin. Searing before roasting makes a noticeable difference.
- Easy, affordable sides. Potatoes, bell peppers, and asparagus round out the meal.
- Flexible seasoning. You can adjust the garlic, lemon, and spices to suit your family’s taste.
- Great for planning ahead. The chicken can marinate overnight, making dinner preparation easier the next day.

How to Make Lemon Herb Roasted Chicken
1. Marinate the Chicken
In a large bowl, combine the lemon juice, lemon zest, Dijon mustard, garlic powder, onion powder, salt, and black pepper.
Add the chicken thighs and coat them thoroughly in the marinade.
Cover and refrigerate for at least 30 minutes. If you have the time, marinate the chicken overnight for even more flavor.
2. Preheat the Oven
When you’re ready to cook, preheat your oven to 400°F.
Remove the chicken from the refrigerator while you prepare your pan. Pat excess moisture from the skin if necessary to help it brown.
3. Sear the Chicken
Heat a stainless steel, oven-safe skillet over medium-high heat until hot. Add enough avocado oil to lightly coat the bottom.
Place the chicken thighs skin-side down in the hot pan.
Let them sear undisturbed until the skin develops a deep golden-brown crust and releases easily from the pan, approximately 5–7 minutes.
Flip the chicken over.
4. Finish in the Oven
Transfer the oven-safe skillet directly into your preheated 400°F oven.
Roast until the chicken reaches an internal temperature of 165°F in the thickest part, without touching the bone.
Depending on the size of the thighs, this may take approximately 20–30 minutes after searing.
Allow the chicken to rest for about 5 minutes before serving.
How to Make the Garlic Potatoes & Peppers
1. Start the Potatoes
Heat avocado oil in a large skillet over medium heat.
Add your diced potatoes and season with Knorr chicken bouillon, paprika, garlic powder, onion powder, and black pepper.
Toss everything together so the potatoes are evenly coated.
2. Cook Until Mostly Tender
Cook the potatoes, stirring occasionally, until they begin turning golden and are mostly cooked through.
If they’re browning too quickly before becoming tender, reduce the heat and add a small splash of water. Cover briefly to help them steam, then uncover to finish browning.
3. Add the Bell Peppers
Once the potatoes are mostly tender, add the chopped red bell pepper.
Continue cooking until the peppers soften and the potatoes are fully cooked, with golden edges.
4. Finish with Fresh Garlic
During the final 1–2 minutes, stir in the freshly chopped garlic.
Cook just until fragrant, being careful not to let it burn.
Taste and adjust the seasonings as needed. Since chicken bouillon contains salt, you may not need additional salt.
How to Make Air Fryer Asparagus
1. Prepare the Asparagus
Wash the asparagus and trim away the tough, woody ends.
Pat dry and toss with avocado oil, fresh lemon juice, garlic powder, salt, and black pepper.
2. Air Fry
Arrange the asparagus in a single layer in your air fryer basket.
Cook at 380°F for approximately 6–9 minutes, depending on the thickness of the spears.
Shake or turn halfway through cooking.
The asparagus should be tender with lightly crisp, roasted edges.
My Tips for the Best Results
Don’t rush the chicken sear. A properly heated stainless steel pan helps create beautifully browned skin. Once the chicken develops a crust, it should release more easily.
Marinate ahead when possible. Thirty minutes works when you’re short on time, but preparing the chicken the night before makes dinner easier and gives the seasonings more time to develop.
Add the peppers after the potatoes. Potatoes take longer to cook, so giving them a head start prevents the bell peppers from becoming overly soft.
Save the fresh garlic for last. Fresh chopped garlic adds wonderful flavor, but it can burn quickly in a hot skillet.
Watch your asparagus closely. Thin asparagus cooks much faster than thick spears, so adjust the air fryer time as needed.
A Simple Homemade Dinner Worth Repeating
There’s something so satisfying about putting a complete homemade dinner on the table without needing complicated techniques or specialty ingredients.
The bright lemon chicken, savory garlic potatoes, sweet peppers, and fresh asparagus complement each other beautifully.
This is exactly the kind of meal I love making at home: practical, flavorful, and comforting.
And if you’re someone who prefers cooking by feel rather than following every measurement exactly, this recipe is especially easy to make your own.
Enjoy!
